There are hundreds of ways to make potato salad, some sweet, some savory, some vinegary but all start with the #1 ingredient, potatoes.
With this recipe you get savory with a little sweet and a little spicy heat. That wonderful balance of flavors that makes your spoon want to scoop up more. It's ok. We understand.
You could use white potatoes, red potatoes or multi-colored potatoes but not russet potatoes as they tend to get more mushy and watery when boiled.
Also, if you like a more crunchy style of potato salad, add more onion and celery. The proportions listed here are to be used as a guide. That goes for the dressing ingredients too.
The versatility of potato salad is what makes it so fun to make and eat!

Makes 4-6 servings
Ingredients:
4 white potatoes (about 1.5 lbs) skin-on or peeled, cut into similar sized large chunks
1/3 cup mayonnaise
3 T brown mustard
3 T Golden Ghost Pepper Jelly
1 small jalapeno, seeded and diced
1 stalk of celery, diced
1/4 cup red onion, diced
1 egg, hard-boiled, cooled, yolk separated and white chopped
Salt & pepper to taste
Preparation:
1. Fill a large pot with water, add enough salt to make the water slightly salty. Bring water to a boil, carefully add the potato chunks and simmer, stirring occasionally, until fork tender (about 10-12 mins) but not mushy.
2. Drain potatoes into a colander and let cool. Once cooled enough to handle, cut potato chunks into small, bite-sized pieces.
3. While potatoes are simmering, to make the dressing, place mayonnaise, mustard, pepper jelly and hard-boiled egg yolk in a small bowl and stir to combine until smooth (a fork works well to break up the yolk and smooth out the jelly). Add salt and pepper to taste.
4. In a large bowl, place cooled potato pieces, diced jalapeno, celery, onion and chopped egg white. Pour dressing over and stir gently to mix the ingredients well. Add salt and freshly ground pepper to taste.
